Ricotta Pancakes with Banana and Honey

                                                   Ricotta                        1/3cup
                                                   Milk                             3/4cup
                                                   Eggs (separated)        4
                                                   Plain flour                   1cup
                                                   Baking powder            1tsp
                                                   Salt                              pinch
                                                   Banana                        4
                                                   Honey                          to drizzle

  • Mix ricotta, milk and egg yolks together
  • Sift flour, salt and baking powder into the ricotta mixture and mix until just combined
  • Whisk egg whites until they become stiff and fold into the ricotta and flour mixture
  • Heat a non stick fry pan and spray it with oil, drop in 2 tbs of mixture (per pancake) cook on a medium heat until they are golden brown then turn over until they are cooked through
  • Slice the banana lengthways and layer it with 2 – 3 pancakes and drizzle it with honey.
  • Note: the pancakes can be cooked earlier and heated up in the microwave or oven.



Basic muesli recipe

                                                   Butter (unsalted)                        250g
                                                   Honey                                        1 ½ cups
                                                   Vanilla essence                         3 tsp
                                                   Rolled oats                                1kg
                                                   Sunflower seeds                        2cups
                                                   Almonds (slivered)                     2cups
                                                   Coconut (shredded)                  2cups
                                                   Pumpkin seeds (unsalted)         1 ½ cups
                                                   Rye flakes                                 2cups
                                                   Chopped dried fruit                   2cups


  • Heat butter, honey and vanilla in a saucepan gently for 5 minutes
  • Lace remaining ingredients except the fruit in a bowl, slowly add the butter mixture and mix it very well (it talkkSpread the mixture on a baking tray and bake at 160*c for about 30 mins, stir it every 5 minutes
  • Remove from the oven and add the chopped fruit, it will store in an airtight container for about 4 weeks
  • Note: use whatever fruit you like e.g apricots, pear, apple, sultanas, raisins, figs, banana, peaches, it is nice eaten with yoghurt.
 


Baked beans


                                                    Dried white beans                          375g
                                                    Onion (diced)                                 1
                                                    Garlic (chopped)                            3cloves
                                                    Carrots (diced)                               2 small
                                                    Bacon (cut in strips)                       2 rashers
                                                    Red capsicums (2cm diced)           2
                                                    Tinned tomatoes chopped)            400g
                                                    Bay leaf                                         1
                                                    Thyme                                           1 sprig
                                                    Paprika                                          1tsp
                                                    Coriander powder                          1 tsp
                                                    Maple syrup                                   3tbs
 

  • Soak the beans overnight in cold water
  • Sauté the onion, garlic, carrot and bacon in a heavy bottomed saucepan
  • When the onions are soft but not colored add the capsicums and spices cook for 2 minutes and then add the tomatoes and beans, cover the beans by about 4cm with water, cover with a tight lid and cook in the oven at 160*c for about 4 hours stirring every ½ hour
  • When the beans are soft add the maple syrup and pepper and salt if it needs it
  • Note: these are perfect for breakfast with poached eggs and toast and also for dinner with some nice sausages or steak.
